This week's pizza is inspired by the cream cheese and smoked brisket stuffed bacon wrapped jalapeno also known as the "Texas Twinkie" made famous by Hutchins BBQ in nearby Mckinney, Tx.

The pizza starts out with a sweet bbq sauce base and is topped with shredded mozzarella and cheddar, 19 hour chopped oak smoked brisket, applewood smoked bacon, and fresh jalapeno. And after a quick bake in my Gozney Arc XL, the pizza is finished with dollops of jalapeno cream cheese and my own homemade Texas Twinkie.

They say everything is bigger in Texas and this pizza is huge on flavor. It's smokey, spicy, savory, and the sweet bbq sauce helps balance it all out beautifully. Hopefully the Bears can spoil Matt Eberflus' return to Chicago and pick up their first win of the season but as always if not at least the pizza was good 🤷‍♂️

  1. Damn of all the pizzas Ive seen this guy make this one really makes me want to make it myself. Does this pizza exist anywhere? Needs to be on more menus.

  2. Every Sunday I wake up looking for your pizza of the week lol. While the bears season hasn’t been good so far, you have been knocking it out of the park every week! Would absolutely smash this one.
