Taking the train from Huntington to tonight's game, but I don't understand why all of the off-peak tickets are more expensive than peak. Can I just buy peak tickets since they're cheaper and use them during an off-peak time?

They’re not.
Peak via Jamaica is 14.75.
Offpeak via Jamaica is 10.50
The cheaper price ($6.25) is only if you change trains to a Hempstead train bound for Jamaica at Floral Park. UBS is in Zone 4, the same zone as Floral Park and Mineola. You never enter Zone 3 or the City Zone if you change at Floral Park.
Any intermediate travel (not going to zone 3 or 1) is considered peak. Not priced higher that’s just what it’s called.
The off peak ticket you are looking at would take you from Huntington to Jamaica, where you would transfer for an eastbound train to elmont. Costs more cause it takes you farther west. This makes no sense because your westbound train from Huntington will stop at elmont.
Buy the peak round trip. For future reference, you can always use peak tickets on off peak trains since they are higher value
How else are corrupt politicians going to fill their slush funds?
LIRR with its absurdly high pricing STILL only manages to cover 40% of its bills. The state of NY pays the additional 60% – meaning your tax dollars ALSO go to the LIRR. Thats how inept they are at running a railroad.
