I’m making turtle soup for the first time today. Never tried it, but I’ve got an idea in my head that I think is going to be bomb.
Starting with beef leg bones to make a 10 hour bone broth to extract all the collagen. Charred onion.
Then I’m m going to blend up some leek and potato for creaminess and make my own cream of mushroom.
I’m brining the turtle in a salt/bay leaf solution. Going to cook in duck fat and sherry.
Then I’m going to add shallots and fennel (the actual plant) into the soup.
Maybe some lemon zest and nutritional yeast to garnish with the fennel bulb.
90% of recipes I found were Creole style, with most of the rest being some sort of french inspired stuff. But I wanted to try my own spin.
I’m actually highly encouraged that Andy moved on from Nagy, Embree and Pinkston. That’s about all that you can ask for from a guy that is known for being extremely loyal to his guys. We’ll probably end up with EB/Kafka at OC and Greg Lewis as WR coach again, but at least Andy is shaking things up from the past few years.
