It's due to the fact that it is no longer balanced when the top becomes heavier the lemons center of gravity is no longer central and the heaviest side which would be the bottom side cause the heavy side wants to be on the bottom so now adding weight to the top of the lemon instantly makes the too side the heaviest and once again heavy ends up on the bottom.
Drink the water first then put the quarter up on that lemon 😅
