
Tennessee baseball nutritionist Beth Schwartz left the Volunteer program to be the Major League Dietician for the Chicago Cubs with oversight of the Cubs’ minor league teams last week.
Schwartz officially left the Volunteer program before the team left for Hoover and the SEC Tournament but plans on providing assistance from afar as Tennessee goes through the NCAA Tournament and looks to defend its national championship from a season ago.
A Tennessee alumnus, Schwartz spent the previous two years Assistant Director of Sports Nutrition at Tennessee working with the baseball, volleyball and swim and dive programs. She worked in tandem with Tennessee baseball Director of Sports Performance Quentin Eberhardt to fuel the Volunteer program.
“(She has) Whatever qualifications, certifications you want,” Eberhardt told RTI last June. “But she will also do the nitty, gritty grunt work also. And does it with a smile on her face and doesn’t act like it’s beneath her. And that’s why we love her.”

Prior to her two-year stint as Assistant Director of Sports Nutrition at Tennessee, Schwartz was the head nutritionist at Ole Miss overseeing the Rebels’ football program. Schwartz took a major pay cut to return to her alma mater after spending a season at Ole Miss.
Schwartz was at Tennessee as Associate Director- High Performance Chef before leaving for Ole Miss, working with the baseball, football and many other programs.
Ironically, Eberhardt previously spent part of the 2022 season as the head strength and conditioning coordinator for the Cubs before returning to Tennessee in that role.
Tennessee baseball begins its NCAA Tournament run on Friday night when they host Miami (Ohio) in its first game of the Knoxville Regional at Lindsey Nelson Stadium. Schwartz joins a Chicago Cubs team that is currently in first place in the NL Central with a 34-21 record.
